A refreshing modern classic take on a Tiki punch from SF’s esteemed Smuggler’s Cove 🍍🏝🍹
The bright, tropical pineapple juice is complemented by the notes of vanilla, caramelized sugar and baking spice in the aged rum and bourbon blend. The passionfruit liqueur contributes its signature sweet/tart notes and integrates nicely with the pineapple while the vanilla and cherry liqueurs add complementary flavors. The lime juice helps balance the acidity and the anise and spice notes of the Creole (or Peychaud’s) bitters helps bridge the flavors
.75 oz Blended Aged Rum (Real McCoy 12 yr works nicely with the bourbon but El Dorado 8 yr would also work nicely)
.75 oz Bourbon (Elijah Craig has nice vanilla notes, but Buffalo Trace or similar options will also work well)
1.5 oz Fresh Pineapple Juice
.5 oz Fresh Lime Juice
.5 oz Passionfruit Liqueur or Syrup (Giffard for former; Small Hand Foods or similar for syrup)
.25 oz Vanilla Liqueur (Licor 43 or Giffard)
.25 oz Maraschino Liqueur (Luxardo, Leopold Brothers, etc)
2 dashes Peychaud’s or Bitter Truth Creole Bitters
Shake with ice and strain into a chilled footed beer glass or Tiki mug with crushed ice. Garnish with a swizzle stick or pineapple frond. This one works great scales up for a gathering (whenever those can happen again)
