A cooling, tropical Highball riff on the Pina colada with notes of grassy sugarcane, citrus, and tropical fruit for a warm summer day🍹🌴🍍🥥🍌 The blend of Haitian sugarcane-based Clairin, unaged cachaca, and Overproof Jamaican rum results in a base with notes of grassy sugarcane and rum funk with aromas of roasted tropical fruit that works in great harmony with the citrus tang of the lime juice and the pineapple notes from the Tepache and pineapple liqueur. Coconut water helps lengthen the drink while adding coconut flavor that is boosted by a splash of the liqueur. Small adds of banana liqueur and lime bitters help boost the fruit and citrus notes while the Tepache also adds effervescence 1 oz Clairin (Haitian sugarcane-based rhum; Clairin Sajous is a really nice option) .5 oz Unaged Cachaca (Brazilian sugarcane based liquor; Avua Prata or Novo Fogo Silver) .5 oz Unaged Jamaican Overproof Rum (Rum Fire, Rum Bar Overproof, Wray & Nephew, etc) .75 oz Coconut Water (I really like Harmless Harvest) .5 oz Fresh Lime Juice .25 oz Pineapple Liqueur (Giffard) .25 oz Coconut Liqueur (Kalani or Clement) 1/2 Tsp Banana Liqueur (Giffard or Tempus Fugit) 1 dash Scrappy’s Lime Bitters Shake with ice and then strain into a chilled Collins glass with ice cubes.
