A delicious variation on a Sour that takes advantage of winter citrus and herbs from the classic Zodiac sign menu from Trick Dog in SF The herbal notes in the tequila mesh very well with the dill syrup while the tangerine brings a lighter, sweeter note to the citrus component and the egg white gives body and froth 2 oz Blanco Tequila (make sure 100% agave) .75 oz Dill Syrup (2 parts granulated sugar: 1 part water; stir until dissolved on medium heat and mix is near boiling; turn off heat and add 4-8 stalks of fresh dill and steep until room temp before straining) 1 oz Fresh Tangerine Juice .5 oz Fresh Lime Juice 1 egg white (or .75 oz if large eggs) Dry shake (no ice) for 15-20 seconds to incorporate egg white and build froth; add ice and shake until cold; strain into chilled glass. Garnish with matcha powder and sprig of dill
