A riff on a Smuggler’s Cove update on a Disney tiki drink from the 70s that incorporates a tropical sour beer for guava soda The guava and passionfruit notes from the beer mingle with the lime and pineapple juice to yield a tart, tropical fruit flavor that is complemented by the fruity aromas in the Jamaican rum. The coconut cream adds richness while enhancing the tropical notes in the drink 1.5 oz Blended Aged Rum (a Jamaican rum like Appleton Estate Reserve or Golden Devil Worthy Park or Hamilton Jamaican are great choices) 1.5 oz Fresh Pineapple Juice .75 oz Fresh Lime Juice 1 oz Coconut Cream (1:1 unsweetened coconut milk and 2:1 simple syrup with a pinch of salt) Shake with ice and strain into a chilled Collins glass with a few ice cubes. Top with 3 oz tropical fruit sour beer* (Modern Times Fruitlands is a good option, as would be anything with guava or passionfruit).
