LaCroix Cocktail

A riff on Don the Beachcomber’s Demerara Dry Float featuring (and built in) a dressed can of LaCroix from Jane Danger of NYC’s Mother of Pearl The addition of rich or cane syrup boosts the passion fruit flavor in the sparkling water while the lime brings fresh citrus, the overproof dark rum adds molasses and spice while the Maraschino Liqueur adds a bit of funk Remove 2.5-2.75 oz from a chilled can of Passion Fruit LaCroix (drink or reserve for other use). Add the following directly to the open can (a funnel can help) .75 oz Overproof Dark Rum (Plantation OFTD is a great option) .75 oz Fresh Lime Juice .75 oz Cane or Rich Simple (2:1 turbinado:water) Syrup .5 oz Maraschino Liqueur Give a few swirls in the can to mix. Garnish with a sprig of fresh mint, a lime shell, freshly grated nutmeg. Though not pictured, this drinks much more smoothly with a straw
