La Perla

An elegant, food-friendly low-ABV Manhattan riff that has been slightly reformatted from the modern classic recipe from SF’s Jacques Bezuidenhout to add a bit more pear 🍐 The pear flavors in the liqueur and brandy work harmoniously with the baking spice notes in the reposado tequila while the dry sherry brings green apple notes that also work well with the tequila and pear. The lemon twist adds a pop of citrus oil that brightens the drink 1.5 oz Manzanilla Sherry (Bodegas Yuste, Hidalgo, La Guita all make excellent bottles) 1 oz Reposado Tequila* (El Tesoro, Arette, etc) .75 oz Pear/Spiced Pear Liqueur (Rothman & Winter, St George (latter is my favorite)) .5 oz Pear Brandy* (St George makes an excellent bottle, Clear Creek is also nice) Stir with ice and strain into a chilled coupe. Garnish with a lemon twist *To follow the original spec (will be a bit richer, less pear-forward), use 1.5 oz Reposado and omit the .5 oz pear brandy
