A bright, refreshing Margarita riff with some winter citrus and touches of spice and smoke The blend of unaged (Blanco) tequila and a roasted corn infused mezcal results in a base with notes of citrus zest, buttered corn, and subtle smoke that stands up to the bright citrus notes from the fresh lime and pink lemon juice and the wonderful sweet/tart kumquat cordial. A splash of vanilla liqueur adds body and nuance while the rim of Tajin (salt, chiles, citrus zest) helps give a hint of spice to each sip. A delicious drink for after work on Friday to kick off the weekend! 1.5 oz Blanco Tequila (100% agave; Tapatio; El Tesoro, Fortaleza, etc) .5 oz Mezcal (even better if you can find the Mezcal Vago Elote bottle that is infused with roasted corn for some extra richness; but a regular Espadin variety bottle will be good too) .5 oz Fresh Lime Juice .25 oz Fresh Pink Lemon Juice (the pink lemon is a more floral lemon variety; can just use an extra .25 oz Lime Juice if not in your area) .5 oz Kumquat Cordial (thinly slice 1/4 C kumquats (including peel) and add 1/2 C granulated sugar and steep for 1 hour to pull out essential oils; add 1/4 C water, 2 Tbsp Fresh Lime Juice, 1.5 Tbsp Fresh Lemon Juice and pulse in food processor or blender until kumquat slices are diced pretty small; strain before use to remove solids) .25 oz Vanilla Liqueur or Syrup (Licor 43 or Giffard for the former) Shake with ice and strain into a chilled double rocks glass containing a few ice cubes that has a half rim of Tajin (before adding ice, rub half of glass rim with cut side of lime and roll in spice mix).
