The tannic notes from the Earl Grey tea syrup and the funkier notes in the fermented tepache add some additional nuance and a refreshing finish 1 oz Calvados (Apple brandy (sometimes with pears included, as in pictured bottle) from Domfrontais region of France) .5 oz Overproof Brandy (Bertoux, Copper & Kings; younger cognac can also sub) .5 oz Single Malt Scotch from Campbeltown (Glen Scotia, Springbank 10; a blended malt like Great King St Glasgow can sub) .75 oz Fresh Lemon Juice .5 oz Earl Grey tea syrup (brew Earl Grey tea in 4 oz water; add equal volume of granulated sugar to tea and stir until dissolved) Tsp Pineapple Liqueur (Giffard; can sub pineapple gomme syrup) Shake with ice and strain into a chilled double rocks glass with a few ice cubes. Top with 1.5 oz of tepache (tasty fermented pineapple beverage popular in Mexico). Garnish with a cocktail umbrella #weekendtiki
