Kingdom Come

A refreshing, summery watermelon daiquiri riff from Brooklyn’s excellent bar Leyenda that is perfect refreshment on a warm afternoon 🍉
The grassy sugarcane notes in the unaged agricole Rhum are rounded out by the subtle bittersweet + vanilla notes in the aperitivo while the watermelon adds a cooling note and works nicely with the tart lime. The Tajin/salt/sugar rim adds a nice spicy kick to each sip
1.5 oz Unaged Agricole Rhum (La Favorite, Rhum JM, Neisson)
.5 oz Cappelletti Aperitivo (has bittersweet notes of other red aperitivo’s but a bit softer and with a hint of vanilla; Aperol is probably the best sub)
.75 oz Fresh Lime Juice
.75 oz Fresh Watermelon Juice
Scant .5 oz Simple Syrup (1:1 granulated sugar to water; stir until sugar has dissolved)
Shake with ice and strain into a chilled coupe where the rim has been rubbed with a cut lime and rolled in a spiced salt mix (2 parts granulated sugar: 1 part Tajin: 1 part kosher salt). Garnish with a lime twist
