King Ralph

An elegant stirred drink with some subtle (yet delicious) pear notes
Inspired by the flavor of a Mexican sugarcane rhum, I thought it could work well in place of the Genever in The Alembic's (SF) modern classic Heir Apparent. Since the combo of pear, Agricole, and vermouth is pretty leftfield, I named it in honor of the equally unlikely successor from the 91 movie. .75 oz Paranubes Agricole Rhum*
.75 oz Pear Brandy (St George makes an outstanding version)
.75 oz Blanc Vermouth (Dolin Blanc or Carpano Bianco)
1 dash Bitter Truth Celery Bitters
1 dash Miracle Mile Ume Bitters
Stir with ice, strain into a chilled coupe. Garnish with a lemon twist *Unfortunately, more traditional Agricole rhums from Martinique (Neisson, La Favorite) have a bit too much funk and a bit less sugarcane flavor. If you need to sub, would recommend doing it with Genever to make the original Alembic drink (also nix the bitters and swap a smacked sage leaf for the lemon twist)
