A rich, but refreshing pina colada riff that has been slightly modified(not a believer in blue curaçao for home bar) from the spec from Fanny Chu of Brooklyn’s Donna 🍍🥥🏝 The grassy sugarcane and tropical fruit notes in the unaged agricole and Overproof Jamaican runs provide a strong and flavorful base that stands up to the pineapple (liqueur and juice) and the rich coconut cream. The curaçao lends a hint of bitter orange and works with the lemon juice to cut the richness. Tastes like a delicious pineapple upside down cake! .75 oz Unaged Agricole Rhum (Rhum JM, Neisson, La Favorite, etc) .75 oz Overproof Jamaican Rum (Wray & Nephew, Rum Fire, Rum-Bar) .75 oz Pineapple Liqueur (Giffard) .75 oz Fresh Pineapple Juice .75 oz Coconut Cream (blend equal parts unsweetened coconut cream and simple syrup with a pinch of salt until uniform) .5 oz Orange Curaçao (original spec uses Blue Curaçao, but they are both the same bittersweet orange liqueur, minus some food coloring) .5 oz Fresh Lemon Juice Shake with ice and strain into a chilled footed pilsner glass with crushed ice.
