Junior Colada

A refreshing, tropical highball from David Perez of Houston’s Lei Low that riffs on the classic Pina Colada 🥥🍍🍹🏝
The pineapple rum contributes notes of caramelized sugar and roasted pineapple that work in tandem with the bright fresh pineapple juice and tart lime juice to create a balanced base that works nicely with the coconut flavors in the liqueur and soda. The coconut soda water also creates a nice effervescence. A great day drink for hanging in the backyard (or eventually a pool)
1 oz Pineapple Rum (Plantation Stiggins Fancy)
.5 oz Coconut Liqueur (Kalani or Rhum Clement Mahina Coco)
1 oz Fresh Pineapple Juice
.75 oz Fresh Lime Juice
Shake with ice and strain into a chilled Collins glass with crushed ice. Top with 1.5-2 oz Coconut soda (LaCroix coconut results in a refreshingly dry, yet tropical sipper). Garnish with a swizzle stick (and a pineapple wedge if handy)
