An elegant, bittersweet sipper that transforms many of the components in Joaquin Simo’s excellent Daisy Buchanan (Manhattan riff) into a Martini using a chamomile forward Gin in place of the rye
The soft, floral notes in the South African gin (especially Chamomile) are boosted by both the Malort and the Blanc vermouth/White wine-based aperitif while the Aperol works with the Malort to provide a bittersweet counterpoint that works really well. The Yellow Chartreuse adds complementary herbal notes while also adding a bit of needed sweetness
1.5 oz Chamomile-forward (or infused) Gin (Inverroche Verdant or infuse dried chamomile buds into gin for 1.5-3 hours; hit me up if you want recipe)
.5 oz Malort (Bittersweet liqueur with Scandinavian origins, better versions also have a slightly floral note; Letherbee or Few recommended)
.5 oz Blanc/Bianco Vermouth (Dolin, Carpano, Bordiga)
.25 oz Cocchi Americano (white wine-based aperitif with quinine)
.5 oz Aperol (Italian aperitivo with light bittersweet notes and juicy orange/blood orange with pith notes)
.25 oz Yellow Chartreuse (lower ABV version of popular herbal liqueur; honey/saffron notes stand out more in this version than the more intense Green)
Stir with ice and strain into a chilled coupe. No garnish
