Jet Airliner

A robust, flavorful Jet Pilot riff with agave spirits that pair nicely with the citrus and spices ✈️🏝 The baking spice and citrus zest notes in the reposado tequila and the fruit and smoke notes from the mezcal work nicely with the tart grapefruit and cinnamon syrup. Fresh lime juice adds some layered nuance to the citrus while the clove notes in the Falernum and the allspice notes in the bitters boost the spice notes to stand up to the citrus. A dash of Absinthe gives a complementary aroma and ties everything together 2 oz Reposado Tequila (El Tesoro, Arette, etc) .5 oz Mezcal (Espadin variety; Del Maguey, Koch, etc) 1 oz Fresh Lime Juice .75 oz Fresh Grapefruit Juice .75 oz Cinnamon Bark Syrup (crush 3-5 cinnamon sticks and toast until fragrant; add 1/2 C each granulated sugar and water; stir until sugar has dissolved and mixture is near boil; turn heat to low and simmer 5 minutes before straining) .5 oz Falernum (Rum-based liqueur from Barbados with clove and lime zest) 2 dashes Angostura bitters 1 dash Absinthe Shake with ice and strain into a chilled footed pilsner or Mai Tai glass with several ice cubes or crushed ice.
