Island Time

A slightly modified variation on the refreshing, slightly smoky daiquiri riff from NYC drink whiz Sother Teague 🏝 The grassy funk of the unaged Agricole rhum and Haitian clairin play nicely with the smoke notes in the rhubarb amaro and the lime juice and bitters work well with the tartness of the rhubarb to produce a refreshing drink 1.5 oz Unaged Agricole Rhum (Neisson, Rhum JM, La Favorite, etc) .5 oz Clairin (Haitian sugarcane rhum; can use full 2 oz of agricole if hard to find) 1 oz Fresh Lime Juice .75 oz Rhubarb Amaro (Amaro Sfumato or Zucca are both great) Shake with ice and strain into a chilled coupe. No garnish
