A tropical yet herbaceous Daiquiri riff from Death & Co’s Matthew Belanger with notes of kiwi, citrus, subtle smoke, rum funk, and fresh cut grass 🦎 🥝🍹
The mezcal contributes notes of tropical fruit, citrus zest, and smoke that combine with the funky blended rum and grassy funk of the unaged cachaca to form a base that accentuates the flavors of the ripe kiwi and the herbaceous notes of the Chartreuse. Fresh lime juice brings balancing acidity and helps tie all of the flavors together
1 oz Mezcal (Nuestra Soledad Lachigui or Los Nahuales both have herbaceous and tropical fruit notes along with their smoke; Espadin variety Mezcal can sub)
.5 oz Blended Lightly Aged Rum (Probitas has a bit of pot still Jamaican rum that is nice here; El Dorado 3 yr; Plantation 3 Star, etc also work well)
.5 oz Unaged Cachaca (Avua Prata or Novo Fogo Silver are good options)
.25 oz Green Chartreuse (complex, herbaceous liqueur from France)
1 oz Kiwi Syrup (juice 2-3 kiwis and add equal volume of granulated sugar; stir until sugar has dissolved and fully incorporated; add ~1 tsp vodka)
.75 oz Fresh Lime Juice
Shake with ice and strain into a footed pilsner or tulip glass filled with crushed ice. Garnish with two slices of fresh kiwi and a swizzle stick
