Hoy-Hoy!

A spicy, full flavored Tiki highball from Liam Odien of Culver City’s Corner Door
The molasses and vanilla notes in the rum are complemented by the honey and offset by the bright fresh citrus and ginger spice while the touch of salt from the soy makes all of other flavors pop
1.5 oz Blended Aged Jamaican Rum (Appleton 12, Golden Devil Worthy Park, etc)
.5 oz Blended Dark Rum (Goslings, Coruba, etc)
.75 oz Fresh Lemon Juice
.5 oz Fresh Orange Juice (Cara Cara are the more flavorful option)
.5 oz Honey Syrup (2 parts honey: 1 part warm water)
.25 oz Ginger Syrup (juice 1 knob of ginger, add 2 volumes granulated sugar:1 part ginger juice; stir until blended)
8 drops Soy Sauce
Shake with ice, strain into Collins glass with a few ice cubes (or Tiki mug with crushed ice). Can garnish with toasted sesame seeds and a cocktail umbrella if feeling fancy
