Honeysuckle Julep

A mint julep riff from Brooklyn’s Damon Boelte that adds some peaches and herbs to the mix The honey syrup amplifies the peach flavor while the Yellow Chartreuse adds a complex herbal hint that is complemented by the botanical notes in the Old Tom gin and the mint adds a pleasing aroma as you sip Muddle two slices of ripe yellow or white peach in .5 oz Honey Syrup (2 parts honey: 1 part warm water, stir until uniform) Add: 2 oz Old Tom Gin (slightly sweeter, pre-London Dry style of gin; good bottles are Hayman’s, Scofflaw, etc) .25 oz Yellow Chartreuse (less boozy, intense sibling to Green Chartreuse) Shake with a single cube and double strain into a chilled double rocks glass filled with crushed ice; top with crushed ice and garnish with a sprig of fresh mint
