Hold Up

A funky, yet bittersweet riff on the Corpse Reviver/Sidecar from New Orleans’ excellent Cane and Table
The pot still Jamaican rum provides notes of tropical fruit and funk which stands up to the bittersweet notes from the grapefruit liqueur and quinine-fortified white wine aperitivo. The citrus notes in the lemon juice act with the aperitivo to lighten the drink while the celery butters provide some herbal/citrus notes that tie everything together .75 oz Pot-Still Jamaican Rum (Hampden Estate, Worthy Park 10, Smith & Cross, etc)
.75 oz quinine-fortified white wine-based aperitivo (Cocchi Americano, Kina L’Avion, Lillet Blanc)
.75 oz Grapefruit Liqueur (Giffard)
.75 oz Fresh Lemon Juice
14 drops Celery Bitters (Bitter Truth, Scrappy’s, Fee Brothers, etc)
Shake with ice and strain into a chilled coupe. Garnish by expressing essential oils from an orange twist over the drink (discarding the twist after)
