The trio of rums (blended lightly aged, Overproof Jamaican, pineapple-infused) provides a base with huge tropical aromas and caramelized sugar flavor that plays really well with the pineapple (liqueur and tepache) and coconut notes (liqueur and coconut water) while the lime adds brightness and the tepache helps add zip and effervescence
1 oz Blended Lightly Aged Rum (Probitas is nice mix of Barbados and Jamaican rums; Plantation 3 Star, etc also work)
.5 oz Overproof Jamaican Rum (Hampden Estate, Worthy Park, Smith & Cross etc)
.5 oz Plantation Stiggins Fancy Pineapple Rum (pineapple-infused rum)
.5 oz Fresh Lime Juice
.5 oz Coconut Water
Fat .25 oz Coconut Liqueur (Kalani)
.25 oz Pineapple Liqueur (Giffard)
Shake with ice and strain into a chilled Collins glass with ice cubes. Top with 2 oz tepache (carbonated and fermented pineapple soda from Mexico) and a dash of Scrappy’s Lime Bitters. Garnish with a swizzle stick and a cocktail umbrella
