A refreshing, tropical Sour riff from Death & Co NYC featuring mango, citrus, vanilla, and subtle ginger and star anise notes 🥭🍨🍹🌎
The Santo Domingo Albarradas mezcal has more floral notes (rather than more typical earthy/smoke accents) along with citrus zest that pairs well with the fennel/star anise notes in the unaged aquavit. The base spirits both complement the tropical sweet/slightly floral notes of ripe mango while fresh lime juice brings some balancing acidity. A touch of ginger syrup adds a spicy accent while the vanilla liqueur adds some complementary flavor to the mango
1 oz Del Maguey Santo Domingo Albarradas (floral notes with citrus zest accents)
1 oz Unaged Aquavit (Krogstad has fennel/star anise notes that work best in this drink)
.75 oz Fresh Lime Juice
.5 oz Vanilla Liqueur or Syrup (Giffard or Licor 43 for the former)
2 Tsp Mango purée (add 1 mango, cubed to food processor with 1.5 tablespoons granulated sugar and 1 tsp lemon juice; pulse until puréed)
1 Tsp Ginger Syrup (juice 1 hand of ginger and measure volume; add 2x granulated sugar to yield of ginger juice and blend until combined)
Pinch of salt
Shake with ice and strain into a chilled double rocks glass with a large ice cube. Garnish with a lime wheel
