Heaven Come Crashing

A rich, comforting Old Fashioned riff that highlights the delightful flavor pairing of apples and guava šŸ„ƒšŸŽšŸ¦ The ripe apple notes in the Calvados (apple brandy from Frances) are complemented by the caramel and baking spice notes in the bourbon and the vanilla custard and roasted tropical fruit notes in the aged agricole rhum. A guava syrup and splash of vanilla syrup add complementary flavors to the apple. Dashes of Angostura and Jerry Thomas’s Own Decanter Bitters add nice baking spice notes 1 oz Calvados (French apple brandy from Normandy) .5 oz Bourbon (Buffalo Trace or Elijah Craig have nice baking spice and vanilla notes) .5 oz Aged Rhum Agricole (Clement VSOP; Neisson Eleve Sous Bois; Trois Rivieres, etc) .25 oz Guava syrup (add ~1 Tbsp guava paste to 1/8 C warm water and heat on low heat, stirring to incorporate the guava paste; gradually add another 1/8 C warm water while incorporating guava paste and removing from heat if it starts to boil; go until guava paste is fully incorporated) Tsp Vanilla Syrup or Liqueur (Licor 43 or Giffard for the latter) 1 dash Angostura bitters (allspice and citrus peel notes) 1 dash Bitter Truth Jerry Thomas’ Own Decanter Bitters (clove, nutmeg, raisin notes) Stir with ice and strain into a chilled double rocks glass with a large ice cube.
