The ripe tropical fruit, black pepper, and smoke notes in the mezcal are supported by the honey and subtle peat notes in the blended scotch and provide an aromatic and flavorful base that complements the roasted ripe banana notes from the liqueur. The bit of honey syrup smooths out some edges to lead to a delicious sipping experience and the essential oils from the lemon twist brighten the drink
1 oz Mezcal (Del Maguey Vida works, but the tropical fruit and spice notes from a higher altitude variety like Santo Domingo Albarradas is really nice)
.75 oz Blended Scotch (Great King St Glasgow Blend has peat notes that work well)
.25 oz Banana Liqueur (Giffard or Tempus Fugit)
.25 oz Honey Syrup (equal parts honey and warm water; stir until dissolved)
Stir with ice and strain into a chilled double rocks glass with a large ice cube. Garnish with the essential oils from a lemon twist (discard twist)
