A refreshing riff on the classic Aku Aku Tiki drink that packs a tropical fruit flavor punch 🍍🍹 The blended lightly aged rum and aged cachaca provide a base with notes of citrus zest and roasted tropical fruit that help accentuate the flavors of pineapple, passionfruit, and peach. The lime juice and pineapple tepache add balancing acidity and zip while the fresh mint adds a pleasant aroma to each sip Muddle 4-6 fresh mint leaves in .25 oz pineapple liqueur (Giffard) Add: 1 oz Blended Lightly Aged Rum (Foursquare Probitas is a nice blend of Barbados and Jamaican rum; Plantation 3 Star, El Dorado 3 yr, etc are also good) .5 oz Aged Cachaca (Avua Amburana or Novo Fogo Gold) .75 oz Fresh Lime Juice .5 oz Peach Liqueur (Giffard) .25 oz Passionfruit Syrup (juice one passionfruit and add about 1 Tbsp granulated sugar; stir until dissolved; Small Hand Foods also makes a nice ready made bottle) Shake with ice and strain into a chilled Collins glass with ice cubes. Top with 2 oz pineapple tepache (fermented and carbonated pineapple beverage from Mexico). Garnish with a sprig of fresh mint #weekendtiki
