A nuanced Sour riff that has been slightly tweaked from the recipe of NYC’s Hunky Dory that has notes of vanilla, chamomile, baking spice, and a refreshing bittersweet finish The vanilla and cinnamon notes in the bourbon pair well with the rounded nutty sweetness of the orgeat while the chamomile-infused rye and Cynar contribute herbal notes and a touch of floralhoney from the Old Overholt that work with the fresh citrus to bridge the flavors 1 oz Bourbon (Elijah Craig, Buffalo Trace, McKenna, etc) .5 oz Chamomile-Infused Old Overholt (can scale this spec to needs: 1/4 C chamomile in 750 mL Old Overholt; infuse 90 minutes with occasional stirring before straining) .5 oz Cynar (Medium bittersweet Italian amaro) 1 oz Orgeat (original spec uses a sunflower seed orgeat, but a more typical orgeat also works well) .5 oz Fresh Lemon Juice Shake with ice and strain into a chilled double rocks glass with a few ice cubes. No garnish (unless you have dried sunflower and marigold petals handy)
