A delicious Tiki highball from Smuggler’s Cove in SF that balances refreshing citrus, tropical and stone fruit, caramelized sugar and spice The blend of runs provide a flavorful base with notes of ripe tropical fruit and caramelized sugar/molasses that works nicely with the rich stonefruit notes in the apricot liqueur and the allspice/clove notes in the bitters. The blend of grapefruit and lime juice provides a refreshing citrus tartness to balance the drink 1 oz Blended Lightly Aged Rum (Probitas is a nice blend of fruit notes from Jamaican rum and barrel spice/brown sugar notes of Bajan rum) 1 oz Blended Aged Rum (Diplomatico or El Dorado 8 or 12 are nice options for their rich flavor) .5 oz Apricot Liqueur (Rothman & Winter, Giffard, etc) .5 oz Rich Simple Syrup (2 parts unrefined sugar of choice: 1 part water; stir until dissolved) .75 oz Fresh Lime Juice .5 oz Fresh Grapefruit Juice 2 dashes Angostura Bitters Shake with ice and strain into a chilled Collins glass with ice cubes. Garnish is open; a swizzle stick and grapefruit twist are nice; could see aromas from a mint bouquet or cinnamon stick also being nice touches #weekendtiki
