Gin Rocket

A refreshing, food-friendly Gimlet variation from Kate Bolton (Maven in SF, Americano/Tusk in Portland) that invites the garden into the cocktail shaker The star anise notes from the fennel and the peppery bite from the arugula pair very well with botanical notes from the gin while the lime brings refreshing citrus Thinly slice about half a bulb of fennel (1/4 cup) and add to cocktail shaker along with 1/4 cup arugula. Add .75 oz Simple syrup and muddle for 15-30 seconds Add: 2 oz Gin (one with citrus notes works best, but any bottle should still be good) .75 oz Fresh Lime Juice Shake with ice and double strain into a chilled coupe.
