A Tom Collins variation involving hazy, tropical IPA along with complementary flavors from the current Death & Co menu The mango, passion fruit, and peach aromas in the IPA are amplified by the citrus, ginger, cinnamon, and peach flavors while the Old Tom gin provides a nice base 2 oz Old Tom Gin (slightly sweet, less juniper forward older style of gin) .5 oz Peach Liqueur (Giffard makes an excellent version, but Marie Brizard or Mathilde also work) .5 oz Fresh Lemon Juice .25 oz Ginger Syrup .25 oz Cinnamon Syrup .25 oz Fresh Orange Juice Shake with ice, add to Collins glass with ice cubes. Top with 1.5 oz hazy, tropical IPA. No garnish
