A flavorful, easy-drinking Old-Fashioned/Julep riff from Death & Co Denver with notes of spiced apples and a hint of the tropical
Infusing the relatively dry bonded apple brandy with guava paste boosts the fruit/apple flavor of the brandy while giving a hint of the tropical guava. The addition of a bit of Single Malt Islay Scotch adds rich hints of sherry and a whisper of smoke at the end while the Angostura adds some baking spice notes and the bit of cane syrup adds a rich sweetness that gives the drink body
2 oz Guava-Infused Bonded Apple Brandy (Laird’s makes the bonded apple brandy of choice; chop up amount of guava paste (Goya or others, available in Latin markets or via Amazon) roughly equivalent to a deck of playing cards into cubes and add to 4 oz of apple brandy in non-reactive container; infuse for 2-3 days with light agitation 1-2x per day before straining for use)
.5 oz Single Malt Islay Scotch (Caol Ila 12, Laphroaig 10, Lagavulin 8, etc)
Tsp Cane Syrup (2:1 rich simple syrup works as sub, but be sure to use unrefined sugar like demerara)
2 dashes Angostura
Stir with ice and strain into a chilled double rocks glass with crushed ice. Garnish with an apple fan
