A refreshing, yet nuanced Daiquiri riff featuring some of the funkier rums from Jamaica and Haiti
The ripe banana and pineapple aromas from the high-ester, Overproof Jamaican rum complement the grass and sugarcane notes in the clairin. The passionfruit syrup gives a nuanced sweet/tart flavor that works well with the lime while the bit of orgeat adds a hint of nuttiness
1 oz Clairin (Haitian sugarcane rum)
.5 oz Overproof Jamaican Rum (Rum Fire, Smith & Cross, etc)
.5 oz Blended Lightly Aged Rum (Plantation 3 Star, El Dorado 3 yr, etc)
.75 oz Fresh Lime Juice
.25 oz Passion Fruit Syrup (Small Hand Foods)
.25 oz Simple Syrup (1:1)
Tsp Orgeat
1 dash Bitter End Chesapeake Bay Bitters
Shake with ice and strain into a chilled coupe. Garnish with freshly grated nutmeg
