Formidable Dragon

A spiced, layered variation of the Tiki Grog family with some deep, dark notes that is one of the modern classics at Smuggler’s Cove in SF
The complex sweetness of the molasses and honey syrup team with the blend of rums to provide a great base for the spice of the Angostura and subtle cola/caramel notes in the Amaro while the citrus balances the drink, the Club Soda adds subtle carbonation and the mint enhances the aroma
1.5 oz Blended Aged Rum (El Dorado 8 is a good choice)
1 oz Blended Dark Rum (Coruba, Goslings, etc)
.25 oz Overproof Jamaican Rum (Smith & Cross)
.25 oz Angostura Bitters*
.25 oz Amaro Meletti*
Barspoon Amargo Vallet (Angostura bark amaro)*
.75 oz Fresh Lime Juice
.75 oz Fresh Lemon Juice
.75 oz Molasses Syrup (equal parts molasses and rich simple syrup (2:1))
.5 oz Honey Syrup (2 parts honey: 1 part warm water)
Shake with ice and strain into a chilled footed pilsner glass with crushed ice. Top with 1 oz Club Soda. Garnish with a sprig of fresh mint and a swizzle stick. *If you have Amaro di Angostura, can sub .5 oz for the hacked version with three asterisked ingredients above
