Flying Guillotine

A fall/winter friendly Tiki punch from Death & Co that highlights the affinity of guava and apple flavors 🍎🍹🍂
The blend of aged apple brandy (Calvados) with both aged Demerara and Overproof Dark Rums creates a base with notes of ripe apples and brown sugar. The tropical apple/pear notes of the guava works really nicely with these flavors while some fresh lime juice adds some zip and balancing acidity and small amounts of Allspice liqueur, vanilla syrup, Absinthe, and Angostura add complementary herbal and spice notes that bridge all of the flavors
1 oz Calvados (Pays d’Age or Hors d’Age; can sub an aged apple brandy in a pinch)
.5 oz Blended Aged Demerara Rum (El Dorado 15 year is a great choice with luscious brown sugar and vanilla notes)
.5 oz Overproof Dark Rum (Plantation OFTD is a nice choice)
.75 oz Fresh Lime Juice
.5 oz Rich Simple Syrup (2 parts demerara or other unrefined sugar OG choice: 1 part water; stir until sugar has dissolved)
.5 oz Guava purée (simmer 2 medium sized slices of guava paste in 1/2 C warm water; stirring until guava has dissolved in the warm water)
1/2 tsp Allspice Liqueur (St Elizabeth Allspice Dram)
1/2 tsp Vanilla Liqueur (Giffard or Licor 43)
2 dashes Absinthe (Herbsaint is a good sub)
1 dash Angostura
Shake with ice and strain into a chilled Collins glass with ice cubes. Garnish with a swizzle stick and edible orchid (if available) or a cocktail umbrella
