A very flavorful low ABV riff on the Daisy from Joaquin Simo during his days at Death & Co Using apricot liqueur and the tropical, aromatic Jamaican rum plays up the raisin and fruit flavors in the sherry. The addition of lemon lightens things without making the drink too tart 1.5 oz Amontillado Sherry .75 oz Fresh Lemon Juice .5 oz Lightly Aged Blended Jamaican Rum (Appleton VX/Signature or Reserve are good calls) .5 oz Rich Simple (2:1) or Cane Syrup .25 oz Apricot Liqueur 1 dash Angostura Bitters Shake with ice, strain into a chilled coupe. No garnish .
