A zippy Sour riff with notes of late summer figs and citrus 🥃
The subtle baking spice and agave notes in the Reposado tequila works with the molasses notes in the dark rum and the raisin/toffee notes in the Solera style sherry to highlight the flavors of the ripe fig. The lemon juice and balsamic syrup balance the drink with tartness while also having flavors that complement the other ingredients. A splash of green apple liqueur helps dry the drink while bridging the fruit and tart notes and the dash of bitters add complementary notes of ginger and baking spice.
Muddle one ripe fig (halved) in .5 oz Balsamic syrup (equal volumes balsamic vinegar and granulated sugar
Add
1.25 oz Reposado Tequila (El Tesoro, Arette, Siembre Valles, etc)
.5 oz Dark Rum (Coruba, Myers, etc)
.25 oz Lustau East India Solera Sherry (notes of raisin, toffee; Pedro Ximenez sherry can sub)
.75 oz Fresh Lemon Juice
.25 oz Green Apple Liqueur (Leopold Brothers NY Sour Apple)
1 dash Bittermens Elemakule Tiki Bitters
Shake with ice and double strain into a chilled double rocks glass with a large ice cube. Garnish with a sliced fig
