False Alarm

A refreshingly savory Mexican Firing Squad riff from bartender extraordinaire Matthew Belanger that evokes the bright flavors of a nice green papaya salad 🍹🚨🥗
The citrus zest and green pepper notes in the unaged blanco tequila combine with the cilantro and green chile notes in the infused vodka to form a savory, citrusy base while a splash of Haitian sugarcane rhum adds a touch of grassy funk that helps bridge these flavors with the floral papaya syrup. Fresh lime juice helps add brightness and acidity while the habanero shrub adds a touch of fruity spice. A great warm weather sip!
1.25 oz Unaged Blanco Tequila (100% agave; Tapatio, El Tesoro, etc)
.5 oz St George Green Chile Vodka (Vodka infused with jalapeño, poblano, serrano chiles and cilantro)
.25 oz Clairin (Haitian sugarcane rhum; Clairin Sajous is a great option. Unaged Agricole Rhum like Rhum JM can sub reasonably well)
.75 oz Fresh Lime Juice
.75 oz Papaya Syrup (add 1/2 C ripe, cubed papaya, scant 1/4 C granulated sugar, 1 oz tap water, 1/2 Tsp Lemon Juice to a food processor and blend until puréed; strain into jar)
2 dashes Bittermens Hellfire Habanero Shrub
Shake with ice and strain into a footed pilsner or Mai Tai glass filled with crushed ice. Garnish with a lime wheel and slice of papaya with a cocktail umbrella
