A tropical yet refreshing Daiquiri riff with plenty of citrus and a spicy kick 🍹🌶🍊
The blended lightly aged rum and Haitian sugarcane rhum (Clairin) form a base that has a lightly funky grassiness that combines with the tropical, slightly floral papaya and bright, tart lime juice that is layered and full of flavor. Dashes of orange bitters and habanero shrub add a touch of fruity heat to finish each sip
1.5 oz Blended Lightly Aged Rum (Foursquare Probitas has a touch of funk that works nicely with the Clairin here; Plantation 3 Star, El Dorado 3 yr, etc substitute well)
.5 oz Clairin (Haitian sugarcane-based rhum; Clairin Sajous works well here)
.75 oz Fresh Lime Juice
Fat .5 oz Papaya Purée (take 1/2 C of cubed, ripe papaya and add to a food processor along with 1/4 C granulated sugar; 1 Tbsp tap water; 1 Tsp fresh lemon juice; blend until puréed)
2 dashes Bittermens Hellfire Habanero shrub
1 dash Angostura Orange bitters (this brand is more juicy orange than orange peel and spice and works well with the habanero)
Shake with ice and strain into a chilled coupe. No garnish
