Equatorial Haze

A refreshing, tropical highball/beer cocktail that riffs off of Smuggler’s Cove’s Agricole Guava Cooler by swapping out the guava soda for a delicious guava/passionfruit/lime sour beer The grassy sugarcane and funk of the unaged agricole rhum provides a nice canvas for the tropically tart flavors of the guava, passionfruit, and lime juice to act. The vanilla liqueur helps balance the tartness while adding complementary flavor while the cinnamon bark syrup and Angostura bitters add some island spice notes 2 oz Unaged Agricole Rhum (Neisson, Rhum JM, La Favorite, etc) .5 oz Vanilla Liqueur (Giffard or Licor 43) .5 oz Fresh Lime Juice .25 oz Cinnamon Bark Syrup (crush 3-4 cinnamon sticks and toast on medium heat until fragrant; add 1/2 C each granulated sugar and water and stir until dissolved and near boiling; step heat down to low-medium and simmer for 5 minutes before straining) 2 dashes Angostura Bitters Shake with ice and strain into a chilled Collins glass with ice cubes. Top with 2 oz of tropical sour beer (Barebottle’s Tiki Tart is delicious, but something like Modern Times Fruitlands or Mikkeller’s Passion Pool would work too). Garnish with a lime wheel, sprig of fresh mint, and swizzle stick
