Eponine Collins

A refreshing Tom Collins variation with a bit of bitterness from Sarah Morrissey of NYC’s Frenchette
The tart notes in the grapefruit are amplified by the bittersweet notes in the Italian amaro and French gentian root liqueur and mesh very well with the citrus peel and juniper notes in the gin and lemon while the basil provides a nice aroma
1.5 oz Gin (one that pairs well with citrus and is not heavy on the juniper is recommended)
.5 oz Suze (French bittersweet liqueur from Gentian root)
.5 oz Amaro Montenegro (Italian bittersweet liqueur)
1 oz Fresh Grapefruit Juice
.5 oz Fresh Lemon Juice
.75 oz Simple Syrup (1:1)
Shake with ice and strain into a chilled Collins glass with a few ice cubes. Garnish with a few slapped leaves of fresh basil
