A refreshing Highball riff from Death & Co’s Tyson Buehler with notes of tropical and stone fruits and baking spice 🥃🍍🍑 The caramelized sugar and cinnamon notes in the bourbon work wonderfully with the pineapple and subtle spice notes in the tepache (carbonated Mexican beverage from fermented pineapple, piloncillo, cinnamon). A splash of apricot liqueur helps round out the drink with some notes of stonefruit while the fresh lemon adds acidity and the bitters add subtle notes of baking spice and dark chocolate. An excellent pairing with food 2 oz Bourbon (a bottled in bond option like Old Forester, Old Grand-Dad, McKenna, etc are good options if available) .25 oz Apricot Liqueur (Giffard or Rothman & Winter) .5 oz Fresh Lemon Juice .5 oz Rich Simple Syrup (2 parts unrefined sugar of choice: 1 part water, stir until sugar has dissolved) 1 dash Bittermens Xocolatl Mole Bitters (Scrappy’s or Miracle Mile are good subs) 1 dash Angostura bitters Shake with ice and strain into a chilled Collins glass with ice cubes. Top with 2 oz of Tepache (De La Calle makes a great canned version). Garnish with freshly grated cinnamon or a cinnamon stick
