A funky, flavorful Daiquiri riff from drinks guru Phil Ward during his time at Death & Co that has become a modern classic The grassy, sugarcane notes in the unaged agricole rhum meld perfectly with the funky molasses and rice notes in the Batavia arrack (17th century distilled spirit from Dutch Indonesia that was an original ingredient in many punches of the time). The tart lime juice and molasses notes in the unrefined sugar syrup balance things out perfectly for a delightful and refreshing drink 2 oz Unaged Rhum Agricole (Rhum JM, La Favorite, Neisson) .5 oz Batavia Arrack (van Oosten; Indonesian spirit distilled from molasses and rice; brings some funk to any shaken drink) .75 oz Fresh Lime Juice .5 oz Rich Simple Syrup (2 volumes unrefined sugar of choice (cane, demerara, palm, brown, etc) to 1 volume of water; stir until sugar dissolves) Shake with ice and strain into a chilled coupe.
