Dub Colada

I was curious to see if I could make a stirred rum drink that had the flavors of a Pina Colada (along with a few wintry notes) and was pretty pleased with this result The flavors of pineapple and coconut come through and are complemented by the vanilla notes from the Ron Zacapa. The sherry, cinnamon, and Tiki bitters add nuttiness and baking spice notes. The secret weapon is a tiny splash of apple cider vinegar that dials down the sweetness without adding any vinegar flavor or aroma 1.5 oz Plantation Stiggins’ Fancy Pineapple Rum .5 oz Ron Zacapa 23 yr Rum (Angostura 1919 would also be a good vanilla-forward rum choice) .5 oz Amontillado Sherry .25 oz Coconut Liqueur (Kalani) .25 oz Cinnamon Syrup 1/2 tsp Apple Cider Vinegar 1 dash Bittermens Elemakule Tiki Bitters 1 dash Scrappy’s Lime Bitters Stir with ice and strain into a chilled coupe.
