Down in Mexico

A tropical, yet refined Martini riff that would make an excellent pairing with dinner
The green notes in the Blanco tequila are boosted by the Green Chile vodka, which also adds some subtle heat while the nutty, dry amontillado works with the roasted pineapple notes of the liqueur and the bright, zesty notes of the lime from the bitters to add several intriguing flavor notes
1.5 oz Blanco Tequila
.5 oz Green Chile Vodka (St George makes an excellent bottle; alternatively can use 2 oz of Jalapeño-infused Blanco tequila in place of first two ingredients)
.5 oz Amontillado Sherry
.25 oz Pineapple Liqueur (Giffard makes a fantastic bottle)
2 dashes Scrappy’s Lime Bitters
Stir with ice and strain into a chilled coupe. No garnish
