A Tiki-fied beer cocktail riff on the refreshing tepache 🍍to enjoy over the summer holiday
The cinnamon notes in the bourbon lend spice and oomph to the pineapple and lime while the Wild Ale adds tartness and funk (while boosting the pineapple and lime notes) and the Li Hing Mui syrup adds savory and sweet notes
1 oz Overproof Bourbon (Wild Turkey 101, Old Grand-Dad, other bonded bourbons)
1 oz Fresh Pineapple Juice
.5 oz Fresh Lime Juice
.5 oz Li Hing Mui Syrup (preserved plum; 2 tsp Li Hing Mui powder for 2 cups sugar: 1 part water)
2 dashes Bittermens Elemakule Tiki Bitters
Shake with ice and strain into a chilled Collins glass with a few ice cubes. Top with 2 oz Tropical Sour Beer (pictured beer is a Wild Ale with pineapple, chilis, lime, and smoked malts). Garnish with a pineapple leaf and fresh grated Li Hing Mui
