Double-Barrel Julep

A layered, spiced Mint Julep variation from NYC’s Joaquin Simo from his days at Death & Co Adding a bit of aged rum to the bourbon boosts the caramel note in the whiskey while also adding a touch of deep molasses sweetness. The float of funky Jamaican Overproof and cinnamon forward bitters adds spice and a bit of tropical fruit that is complemented by the bit of peach 1.5 oz Overproof Bourbon (Old Grand-Dad 114 is a great option) .5 oz Blended Aged Rum (Diplomatico Reserva Exclusiva or El Dorado 12 are good picks) Teaspoon Peach Liqueur (Giffard, Massanez) Teaspoon Rich Simple Syrup (2:1) Stir briefly with ice and strain into a chilled double rocks glass with crushed ice. Float .25 oz Overproof Jamaican Rum (Smith & Cross) on top and add 4 dashes of Fee Brothers Whiskey-Barrel Aged Bitters. Garnish a sprig of fresh mint
