A powerhouse Dr Funk riff from Death & Co’s Matthew Belanger with notes of molasses, pomegranate, roasted tropical fruit, and a distinct touch of Absinthe 🍹🏝
The mix of cask strength whisky (Indian whisky or rum-cask finished Scotch), aged Demerara rum, and funky rice-fermented Batavia arrack result in a base with notes of brûléed tropical fruit and molasses. This base is complemented by sweet/tart notes of pomegranate and fresh lime while several dashes of Absinthe add an intriguing star anise finish
1 oz Cask strength tropical fruit-accented whisky (Amrut from India; rum-cask finished Ardbeg or Glen Scotia, etc)
.5 oz Blended Aged Demerara Rum (El Dorado 15 yr is a great option)
.5 oz Batavia Arrack (proto-rum from Java distilled from red rice; an original punch ingredient with notes of funk and molasses; van Oosten makes a nice bottle)
.75 oz Fresh Lime Juice
.5 oz Simple Syrup* (equal parts granulated sugar and water; stir until sugar has dissolved)
Tsp Pomegranate Molasses* (tart syrup from pomegranate popular in Eastern Mediterranean cuisine)
6 dashes Absinthe (Herbsaint is also a good sub)
Shake with ice and strain into a chilled Collins glass filled with crushed ice. Garnish with a swizzle stick or pineapple fronds and a cocktail umbrella
*Two ingredients above are what I use to make my own grenadine approximation. If you have a nice bottle of grenadine with full pomegranate flavors (not Rose’s), you can use .75 oz of that in place of these two
