Doctor Funk

A refreshing, yet funky Tiki classic where dark rum was added to a drink that was spreading throughout the South Pacific 🏝🗿 The funky, pot stilled Jamaican dark rum brings molasses and dark fruit notes that stands up to the star anise notes of the Herbsaint and the funky sweet/tangy pomegranate while the citrus brightens the drink and the seltzer adds effervescence Add the following to a blender: 2.25 oz Jamaican Unaged Pot Still Dark Rum (Hamilton Jamaican Black is a great option) .25 oz Herbsaint (can sub absinthe) .25 oz Grenadine (I like to mix pomegranate molasses with a bit of simple syrup for more intense pomegranate flavor) .5 oz Fresh Lime Juice .5 oz Fresh Lemon Juice .5 oz Rich Simple Syrup (2 parts unrefined sugar of choice (I like Demerara) to 1 part water, stir until dissolved) 1 oz Club Soda or Seltzer Add 4-6 chunks of ice and blend for 4-5 seconds; pour (with ice) into footed pilsner glass. Garnish with a pineapple leaf or a swizzle stick #weekendtiki
