A cool, refreshing Penicillin/Fizz riff with notes of tropical fruit, citrus, chamomile, and smoke 🍹🥥🍋
The chamomile tea infusion boosts the dusty and floral notes in the Old Overholt rye whiskey while the bonded bourbon has caramelized sugar and subtle baking spice notes that play nicely with the chamomile and citrus. Fresh lemon juice combines with a splash of passionfruit liqueur to lend a nice tart/fruity finish to each sip. Honey syrup adds body and balance while the coconut water adds refreshment and lengthens the drink. A splash of coconut liqueur boosts the coconut flavors while a float of Islay scotch adds complementary smoke notes while also integrating the coconut and citrus with the other whiskies.
1.25 oz Chamomile-infused Old Overholt rye (add 1/4 C chamomile per 750 mL bottle of rye; can scale down; let chamomile steep 60-90 minutes with occasional stirring before straining back into the bottle)
.5 oz Bonded Bourbon (Colonel EH Taylor, etc)
.75 oz Fresh Lemon Juice
Fat .5 oz Honey Syrup (2 parts honey: 1 part warm water; stir until honey is fully incorporated)
Tsp Passionfruit Liqueur (Giffard; can also use a syrup like the one from Small Hand Foods)
Tsp Coconut Liqueur (Kalani)
1.5 oz Coconut Water (Harmless Harvest is my favorite option)
Shake with ice and strain into a chilled double rocks glass with a few ice cubes. Float .5 oz Islay scotch (Ardbeg Drum is aged in rum barrels and has nice smoke and subtle roasted tropical fruit notes; Laphroaig 10, Ardbeg 10, etc can sub well). Garnish with a lemon wheel
