These flavors work very well with the sweet/tart passionfruit in the syrup and Gose style beer and are supplemented by honey, lime, and allspicefor a delicious, yet potent punch 2 oz Blended Aged Demerara Rum (Hamilton Demerara, El Dorado 8 yr, etc) .5 oz Unaged Rhum Agricole (Want a 100 proof expression; La Favorite/Rhum JM/Neisson are personal favorites) .5 oz Overproof Jamaican Rum (I like the bright tropical notes in Rum Fire here, but Smith & Cross would definitely sub) .5 oz Fresh Lime Juice .5 oz Honey Syrup (1 part honey: 1 part warm water; stir until blended) Scant .5 oz Allspice Liqueur (St Elizabeth’s, DeGroff Pimento) Fat .25 oz Passionfruit Syrup (Small Hand Foods) Shake with ice and strain into a chilled Collins glass with ice cubes.
