Demerara Dry Float

A tart, dry, complex Tiki classic from Don the Beachcomber by way of Smuggler’s Cove 🍹
The lime and passion fruit syrup combine to establish a delightful and nuanced tart/sweet base that is brightened by a bit of lemon juice while the molasses and vanilla notes from the rum add body to the drink and the Maraschino liqueur adds a subtly funky, dark fruit note. The side of danger pour of Overproof rum brings necessary oomph
1.5 oz Blended Aged Rum (I used a mix of 1 oz El Dorado 8 yr and .5 oz Aged Jamaican Rum to bring some funky tropical notes)
2 oz Fresh Lime Juice
1 tsp Fresh Lemon Juice
1.5 oz Passionfruit Syrup (Small Hand Foods)
.25 oz Maraschino Liqueur (Luxardo)
.25 oz Rich Simple Syrup (2:1)
Add to blender with 1 Cup crushed ice and blend until uniform; decant into a footed pilsner glass. Pour .75 oz of Overproof Rum as a sidecar (separate small glass/shot glass) and float as much/little as you’d like (editorial: floating entire pour atop the drink yields the best results and Lemonhart 151 is the preferred rum option (Plantation OFTD is a good sub)
