Death from Above

A high octane Rum Old Fashioned riff from NYC drink wizard Thomas Waugh from his time at Death & Co 🥃
The blend of overproof Demerara, Aged Blended Trinidadian, and Blackstrap rums creates a flavorful base with notes of molasses, caramelized sugar, vanilla, coffee, and aged leather. Additions of blended sherry and rich simple syrup add notes of toffee and a hint of rum raisin while the bitters add notes of citrus peel and baking spice that help round out the drink
1 oz Overproof Demerara Rum (Lemonhart 151 or El Dorado 151)
.75 oz Blended Aged Trinidadian Rum (Scarlet Ibis or Angostura 1919)
.25 oz Blackstrap Rum (Rum fermented from blackstrap molasses; Cruzan makes a nice bottle)
1 Tsp Lustau East India Solera Sherry (a moscatel or Pedro Ximenez sherry is probably closest sub)
1 Tsp Rich Simple Syrup (2 parts unrefined sugar of choice to 1 part water; stir until dissolved)
2 dashes Orange Bitters (1 prefer an equal mix of spicier Regan’s #6 orange and juicier Angostura Orange)
1 dash Angostura bitters
Stir with ice and strain into a chilled double rocks glass with a large ice cube. Garnish with an orange and lemon twist
